- 1 tablespoon fish sauce
- 2 (28 ounce) cans of whole tomatoes
- 1 beef stock block
- 1/4 parsley, chopped
Sunday Sauce Instructions
- Mix milk and breadcrumbs in a medium bowl. When they have absorbed all the liquid, add the egg, then the Italian seasonings, parsley, salt, black and cayenne pepper. Stir, then roll in the beef. Mix until evenly distributed and form into meatballs.
- Heat the olive oil in a large pan (at least 6 liters) over medium-high heat. Sear the meatballs, turning them carefully to prevent them from being crushed.
- Remove meatballs and set aside. It does not matter if they are not finished yet.
- Salt the ribs and fry them in a pan.
- Transfer the short ribs to a separate large bowl.
- Salt and fry the pork chops in a pan, then add to the bowl with the short ribs.
- Fry the sausages in the fat and then add them to the bowl with the ribs.
- Pour the fat into a glass bowl and then put 2 tablespoons back to the grill. Reduce heat to medium, add onion and peppers and cook until tender.
- Add garlic, herbs, fennel, black pepper and sauté for 2 minutes.
- Add tomato paste and sauté until mixed.
- Add the wine, balsamic vinegar, beef stock and fish sauce and bring to a boil.
- Puree a can of tomatoes. It is easy to use a dip mixer, but a regular blender will do.
- Squeeze another can of tomatoes with your hands into a bowl.
- Put two tomatoes in the saucepan and bring to a boil. Salt to taste.
- Add the ribs and sausages to the sauce and lower the heat to low. Cover and simmer for about 5 hours.
- After 5 hours, remove sausages and pork chops and add to reserved meatballs. Remove the bones from the short ribs and cook, covered, until the short ribs have fallen apart and the oil that has settled on top has been emulsified in the sauce for about 2 hours.
- Add the meatballs, ribs and sausage to the sauce and bring to the boil to cook the meatballs.
- Serve the sauce with quality pasta, a spoonful of ricotta, grated parmesan and garnish with chopped parsley.
