This is a mix of my Ousus Pearl recipe and another recipe I found online, so I mixed the recipes to create my own. Thanks to my husband Mike for his photographic skills !!
Ingredients and spices for the preparation of Ma Tourtière:
- 1 pound of lean minced meat
- 1 pound of minced pork
- 2 cloves of minced garlic
- I finely chopped an onion
- 2 teaspoons salt
- 1 teaspoon dry mustard
- 1/2 teaspoon sage
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cinnamon
- 1/8 teaspoon cloves
- 1/2 cup water with potatoes
- 2 medium potatoes, peeled, chopped, boiled and grated (about 1 cup)
- 1 core double pie (9 inches).
My Tourtière cooking instructions
- Boil the potatoes. After cooking reserve 1/2 cup water, potatoes are ready. Drain the water and finely chop the potatoes. Leave in the pot for now.
- In a saucepan or large saucepan, simmer the meat, onion and garlic over low heat for about 1 hour, stirring occasionally. Drain the fat. Add spices and potato water. Cook on low heat for another 1/2 hour. Add the reserved mashed potatoes to the meat mass and mix well. Remove from heat. Cool completely.
- Fill the bowl with the cooled meat mixture. Cover with the top of the dough batter and grab the edges. Beat an egg and clean the pasta
- If cooking immediately, coat with beaten egg and bake in preheated 400F oven for 30-40 minutes until crust turns golden brown. Serve hot. Once you have frozen the baking, coat it with beaten eggs and bake it in the preheated oven at 400 degrees for 50-60 minutes or until they turn golden brown.
